Healthy Banana Oatmeal Raisin Cookies

Yields: 15 biscuits

The familiar comfy spices and plump raisins make them even more irresistible. They will keep for at least one week if kept in an airtight container in the refrigerator--should they last long!


1 cup (100g) instant oats (fermented if required and measured like this)

3/4 cup (90g) whole wheat or fermented * flour (quantified like that )

1 1/2 tsp baking powder



1/4 tsp salt

2 tablespoons (28g) unsalted butter or coconut oil, melted and cooled slightly

1/4 cup (63g) mashed banana

1 teaspoon vanilla extract

1/2 cup (120mL) pure maple syrup

1/4 cup (40g) raisins

In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. Stir in the maple syrup. Add the flour mixture, stirring only until incorporated. Fold in the raisins.

Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
